FRESH PRODUCTION TECHNICIAN
JOB SUMMARY
Under general direction of the Director of Nutrition Services or designee, the Fresh Production Technician works and leads the work of other assigned Nutrition Center workers. Performs all phases of quantity food production in a large central kitchen operation, with the primary focus on fresh production; assist in the daily operation and upkeep of commercial equipment, uses independent judgment to make decisions relating to the work assigned, may coordinate staff to meet production schedules, and to do other related work as may be required.
ESSENTIAL JOB DUTIES AND RESPONSIBILITIES

Produces high-quality fresh products in quantities required by school food service programs;

Safely and efficiently operate a variety of highly specialized equipment utilizing manufacturer recommendations and industry standards;

Create and modify standardized recipes using current industry standards;
-
Collect, assemble, and proportion ingredients accurately following standardized recipes;
-
Requisition, receive and store foodstuffs, supplies, and materials used throughout the production department, and inventory according to department standards;

Develop and maintain a production record system that verifies production, and complies with USDA regulations;
-
Assist in the preparation of all products prepared at the Nutrition Center when needed;
-
Participate in the menu development process to ensure that production needs can be met;
-
Utilize proper sanitary practices consistent with HACCP standards throughout all phases of work;
-
Train and oversee the work of Nutrition Center Assistants in both food production and the proper and safe operation of equipment;
-
Participate in the annual budget development process; identifying staffing, equipment, and supply needs of the fresh production area;
-
Assist in maintaining nutrition center areas in a clean, sanitary, and orderly condition;
-
Delivery of prepared foods, may set up a serving station, serve food to students, and break down of equipment on non-school session days and/or when critical needs arise;

Perform other related work as may be required.
EMPLOYMENT STANDARDS

Proper methods of producing large quantities of a variety of fresh products;

Operation of commercial equipment and routine food production equipment;

HACCP (Hazard Analyses Critical Control Point) standards;

Kitchen sanitation techniques and personal hygiene related to food handling;

Methods and terminology used in food preparation;

Safe working methods, practices, and procedures;

Basic arithmetic and record keeping;

Computer operation using basic software programs;

Work simplification methods.
Ability to:

Skillfully prepare high quality fresh products;

Compute food quantities and ingredient needs for required menus, including conversion of weights and measures;

Read and comprehend equipment operation and maintenance manuals, and apply knowledge to district equipment;

EDUCATION / EXPERIENCE
Education: High School Diploma, General Education Degree (GED), or Certificate of Proficiency and possession of the knowledge and abilities listed above.
Experience: Minimum of two years of experience in quantity food preparation. Supervisory experience preferred.
REQUIRED LICENSES AND/OR CERTIFICATES

Possession of and maintain a valid California Driver's License during the course of employment;
-
Have an acceptable driving record;
-
Must be insurable at standard rates by District's insurance carrier and maintain such insurability during the course of employment;
-
ServeSafe Food Safety Certification.
PHYSICAL DEMANDS AND WORKING CONDITIONS
The physical requirements indicated below are examples of the physical aspects that this position must perform in carrying out the essential functions listed above.
Physical Demands: Stand, bend and twist (up to continuously); reach, push, pull, look downward (frequently); walk, stoop, kneel (occasionally); squat, climb, foot controls (frequently); lift/carry up to 25 pounds (frequently), lift up to 55 pounds (occasionally); grasp manipulate food items/equipment (frequently); use vision, hearing and speaking continuously.
Working Conditions: Work indoors; exposure to cold/heat from freezer and ovens, cooking noises and odors, electrically mechanically/gas operated equipment, cleaning fluids; may travel to other district sites.
